That’s a lip-smacking dinner in a flash.
This raw vegan soup is light on your belly and won’t take more than 10 minutes of your time. And it’s salty too. A tomato and celery that you gonna put in it have sodium and potassium in them – organically-occurring version of a table salt, basically. Hence, it will serve you good in case you are in the middle of salt cravings. Or after a sweaty workout. Remember that when sweating, you, along with other electrolytes, lose sodium and chloride. That’s the reason actually, that after a vigorous exercise, you may taste salt on your lips. If you are planning to have the soup after working out have something more substantial on top as it’s quite low in calories.
I mentioned Frederic Patenaude in one of my older posts. Frederic has been in raw veganism for over 20 years. So, he got special knowledge on which foods go well together. A tomato and celery is one of his combos. He says that he got traces of epicurean blood in him. However, at the same time rarely feels like spending an eternity on “marrying” the ingredients. Hence, he sticks to two in one recipes – relatively quick & yummy. Same with me. I’m not sure of I’m a little bit of an epicure myself but certainly don’t have desire to spend hours preparing something.
If you ever looked into the “official” raw vegan cuisine the recipes take a loooong time. They are fine once in a while. For everyday – too much. After all, we are not about building Egyptian pyramids here. And really, there is no need to. Because taking less time doesn’t mean you are compromising anything. The taste? Nope. You can make something three times as fast and it will be just as good, if not better, taste-wise. The nutritional profile? Absolutely not! In fact, it will be even more healthy. The less ingredients you use and the less manipulations you do with them – dehydrating, seasoning – the less burden there is on your digestion. And that’s actually the beauty of raw veganism – time spent doesn’t determine the final outcome. See for yourself: when was the last time you had to throw out a smoothie or a salad because they came out awful? Doesn’t happen often…
So, here is it, the soupy fantasy.
For one serving you need:

1 tomato or 1/2 cup of cherry tomatoes

2-3 stalks of celery

1/2 cup of sundried tomatoes

1/2 avocado
-
1-2 fresh herbs that you like
-
3/4 cup of water
1. Blend a tomato/cherry tomatoes, celery stalks, avocado and water. Season with one or two of your herb faves. I harvested and put basil, dill and cucumber flowers from my mom’s garden.
2. Once you blend everything, throw in sundried tomatoes. You may want to soak the tomatoes beforehand.
3. If you want your soup warm, warm it up a little in a dehydrator.
4. Make it pretty using the same herb(s).
5. And devour it!
