This young coconut smoothie will make you feel better after a tiring toasty day. It’s just a baby coconut and seasonal fruits.
The baby coconut is this white dome-shaped thing you see on the photo. It’s quite different from a regular brown one. It gets harvested before having a chance to fully ripen. For this reason, its skin is green. You most likely saw these green elongates guys hanging off the palms when on holidays in hot places. The green gets trimmed by a specially-designed machine before shipping however. Its meat is tender and more subtle in flavor. You can scoop it out with a spoon! And it’s widely available, so you should have no problems finding it in your nearby supermarket.
Take:
- 1 young coconut
- 1 peach
- 1/2 cup of strawberries
1. Drain the water from your coconut
2. Take the meat out with a spoon. If you don’t want little pieces of coconut dancing in your smoothie, blend the meat with a bit of coconut water until it acquires a puree-like consistency. Then add the remaining coconut water, peach, strawberries and blend again
3. If you don’t mind the pieces, blend everything at once
4. If need it sweeter, add a half of ripe banana and drink it up
